Crackable Brûlée Cocktail Sugar Discs

A creative homemade garnish or cocktail technique that goes beyond another flavored syrup or foam.
Ingredients
- 1/2 cup granulated sugar
- 2 tbsp water
- 1 tsp light corn syrup
- silicone baking mat
Instructions
- Prepare a flat heat-safe silicone mat.
- Heat sugar, water and corn syrup in a heavy saucepan without stirring until a pale amber caramel forms, about 320–340°F.
- Carefully pour very thin circles slightly wider than your glass opening; allow to cool completely.
- Balance one dry disc over the glass and gently tap to crack before sipping.
Storage & safety
Hot caramel can cause serious burns. Use a candy thermometer, do not pour onto skin or wet surfaces, and keep finished discs airtight and dry. Prepare and serve on the same day.
