Crystal-Clear Tomato Water for Savory Cocktails

A creative homemade garnish or cocktail technique that goes beyond another flavored syrup or foam.
Ingredients
- 4 ripe tomatoes
- 1/4 tsp kosher salt
- 3 fresh basil leaves
- optional few drops sherry vinegar
Instructions
- Roughly chop tomatoes and pulse briefly with salt and basil.
- Transfer to a cheesecloth-lined sieve set above a bowl; refrigerate and let drip 6–12 hours without pressing for the clearest liquid.
- Chill the collected tomato water.
- For a savory gin drink, stir 2 oz gin with 1 oz tomato water and ice, then strain and add a basil leaf.
Storage & safety
Keep refrigerated and use within 24 hours. Clarity depends on straining without squeezing.
