Butterfly Pea Color-Changing Concentrate
A vibrant blue botanical concentrate that changes color when citrus is added.

WHAT YOU NEED
Ingredients
- 2 tsp food-grade dried butterfly pea flowers
- ½ cup hot water
- 1 tbsp sugar (optional)
- Lemon or lime juice to add when serving
LET’S MAKE IT
Instructions
- Steep flowers in hot water for 8 minutes.
- Strain, sweeten if desired, and chill.
- Add a spoonful to lemonade or a clear mocktail; squeeze in citrus to watch blue shift toward violet.
- Refrigerate concentrate and use within 48 hours.
